Paleo Muesli (as seen in our 12 Days Christmas Party)

2 cups desiccated coconut
1 cup of pumpkin seeds
1 cup of sunflower seeds
1 cup of flaked almonds
1 cup blanched (or whole) almonds
1/2 cup of raisins
4 tbs coconut oil melted
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp pure vanilla extract
2 tbs pure canadian maple syrup
1 cup hazelnuts and/or or brazil nuts (optional)
1 cup chia seeds (optional) - added after toasting in oven

Step 1 - Pre-heat oven to 165 degrees (fan forced)
Step 2 - Line a baking tray with baking paper
Step 3 - In a large bowl mix together the seeds and nuts 
Step 4 - Take HALF the nut and seed mixture and blast for a few moments in a food processor or high power blender.  The mix should look finely chopped - but not too much like fine crumbs.
Step 5 - Add the chopped nuts/seeds mix to the whole seed/nuts mixture. 
Step 6 - Add the raisins and desiccated coconut to the nut/seed mixture - mix well 
Step 7 - Melt coconut oil in a pan - pour half into a cup and leave aside for later
Step 8 - Add cinnamon, ginger, vanilla extract and 1tbs maple syrup to the pan with the cononut oil.  Mix for 1-2 mins until combined/slightly runny
Step 9 - Pour coconut oil mixture over the nut/seed mixture - mix well
Step 10 - Spread evenly over the lined baking tray. Drizzle remaining coconut oil and maple syrup over the mixture.  Cook for around 10-15 mins (or until browned slightly)
Step 11 - Serve with coconut yoghurt and fresh berries of your choosing
